Whole wheat bread
2 tbsp hummus
Thinly sliced jicama root
Bell peppers, tomatoes, sliced cucumbers or veggies of your choice
Layer hummus and baby spinach onto bread. Load up the jicama and veggies, and top off with a handful of pea tendrils or your favorite microgreens.
